Don’t be afraid of these Monster Bars…unless you count calories! Then be afraid, very afraid…I find it is one of those bars I keep sneaking back for just one more. Perhaps they are a bit scary for the waistline but the mix of these ingredients has a bit of everything on your sweet tooth checklist so I recommend giving them a try.
1 cup granulated sugar
1 cup brown sugar
½ cup butter or margarine, softened
1 cup creamy peanut butter (or wow butter)
3 large eggs
1 teaspoon vanilla extract
2 teaspoons baking soda
1 teaspoon salt
¼ cup plus 2 tablespoons cocoa powder
1 cup all-purpose flour
2 cups oats
1 cup semi-sweet chocolate chips
1 cup m&m’s
Line a 9 x 13″ baking pan with parchment paper and spray with nonstick spray. Preheat oven to 350. Cream together both sugars, butter and peanut butter. Mix until well combined and then add one egg at a time to the mixture until all eggs are thoroughly incorporated. Add vanilla and stir. While mixer is on low speed add in baking soda, salt, and cocoa powder or use a spoon and stir vigorously. Add flour and continue mixing until smooth. Add oats to the bowl and mix until just combined. Stir in chocolate chips and m&m’s. Press dough into prepared baking pan and bake in the oven for 25-30 minutes or until a toothpick inserted in the middle comes out clean. Remove from the oven and let cool for 10 minutes. Remove bars from pan (using the edges of the parchment paper) and transfer to a wire rack to cool completely.
TIPS: If you have a nut allergy substitute peanut butter with wow butter. My oven took about 29 minutes to finish.
