Stef’s Kitchen Creations ~ Bread and Butter Pickles


When I was shopping at the local market and found cucumbers priced at 39 cents each I knew it was a perfect time to finally try making my own pickles. I did go overboard on the cucumbers so I ended up quadrupling my recipe but with lots of pickle lovers in the house I know they won’t last long. Here is the recipe which will make about 4 cups worth but you can always double, triple, etc. depending on the quantity you want. Or quadruple like me:)




4 cups cucumber slices, 1/8″ thick
1 cup thin onion slices
1 clove garlic
2 tbsp. pickling salt (coarse salt)
2 cups ice cubes
1 cup white vinegar
1 cup water
1 1/2 tsp mustard seed
1 tsp celery seed
1/2 tsp turmeric
1/4 cup plus 4 tsp white sugar


Combine cucumber, onion and garlic in a glass bowl. Sprinkle with pickling salt. Cover with ice cubes, cover and let stand in a cool place, at least 6 hours or overnight. Drain well. Combine vinegar, water, mustard seed, celery seed and turmeric in a large saucepan. Bring to a boil. Add drained cucumber mixture. Return to a boil and cook for 2 minutes. Discard garlic clove and stir in sugar. Spoon into hot sterilized jars. Wipe jar rims and seal. Store in a cool, dark, dry place.

Betty Beatty-Powers - Stef…you could always give a bottle to your Dad and step-mom if you have any left over! I am sure they are good!
