Stef’s Kitchen Creations ~ Roasted Potatoes


Quick and easy! Back to school week is here and meal planning is one thing that becomes more regular as everyone gets back into a routine. I’m always looking for different ways to mix up meals and side dishes are no exception. Here is a recipe with TWO ingredients for you to make that is anything but routine with loads of possibilities!





1 lbs potatoes, diced
1/4 cup Italian salad dressing


Preheat oven to 400. Line a cookie sheet with parchment paper and lightly spray with cooking spray (or spray directly on cookie sheet).  Toss potatoes with salad dressing and spread in an even layer on baking sheet. Bake 35-40 minutes until potatoes are tender when pierced with a fork, flip half way through cooking time.

TIPS: I diced as many potatoes as needed for my family and poured dressing over enough to generously coat them. No measuring is really necessary. Mix it up with other salad dressings such as roasted red pepper with parmesan.
