Yes, blueberry COOKIES! I sometimes wonder if I may somehow be related to the cookie monster, I love making cookies and eating them too of course. I held on to this one for so long I don’t even know where it came from now. With all the blueberry recipes I’ve tried or seen over the years, cookies isn’t something that seemed to go with blueberries. I had some extra berries in the freezer recently and decided it was time to give that aging recipe a test and I regret not trying it sooner. What a pleasantly surprising treat! With blueberries harvesting soon in many areas this is a keeper.
1 cup butter or margarine, softened
1 cup brown sugar, packed
1/4 cup white sugar
1 tsp vanilla extract
2 cups + 3 tbsp. flour
3/4 tsp baking powder
1/3 tsp baking soda
1 tsp salt
1 cup blueberries
Preheat oven to 350 and line trays with parchment paper. Using an electric mixer, beat the butter until smooth. Add both sugars, egg and vanilla and beat until well blended. In a separate bowl combine flour, baking powder, soda and salt. Pour half the flour mixture into the butter mixture and beat on a low speed until just combined. Add blueberries to the remaining flour mixture and mix by hand being careful not to over mix.
Bake 12-15 minutes until golden.
TIP: Took 15 minutes in my oven.
