This is a delicious recipe for the summer, and would look so festive on your table celebrating Canada Day on July 1st! It is delicious if you make your own or buy homemade strawberry jam! Of course, bottled jam from the store will work just fine. This one ranks high up there on the family favorite list!
2 cups flour
3/4 cup packed brown sugar
3/4 cup finely chopped almonds, optional
3/4 cup butter or margarine
2 pkgs (8 oz each) softened cream cheese
2/3 cup granulated sugar
1/2 tsp almond extract
1 cup strawberry jam
3/4 cup sliced almonds, optional
Preheat oven to 350. Grease a 13 x 9″ cake pan.
Crust: Combine all ingredients until crumbly. Reserve 3/4 cup for topping. Press remainder into prepared pan. Bake 12-15 minutes or until edges are golden. Filling: Beat cream cheese, sugar, eggs and extract on medium of electric mixer until smooth. Spread evenly over hot crust. Bake for 15 minutes. Stir jam until smooth. Spread over filling. If using, stir sliced almonds into reserved crumble mixture. Sprinkle over jam. Bake for 15 minutes longer. Cool completely on wire rack. Refrigerate for at least 3 hours or overnight before cutting into squares. Store in refrigerator.
TIPS: The oven bake time for the crust in my oven was 12 minutes. Vary this recipe with other fruits such as blueberry, raspberry, apricot, etc. Freezes well.
