Pioneer Woman’s Mom’s Muffins

I should have known they would be good.  Have you ever made anything of hers that hasn’t been good?  I haven’t…and I’ve tried a lot of her recipes.  One night last week after supper I whipped up a double batch of PW’s Mom’s Muffins.  We were expecting a blizzard to start through the night, and I always like to have something made just in case we loose power…well…that’s my story anyway.  😉  You will really enjoy reading her post about these particular muffins.  She’s hilarious…don’t you love her.  If you don’t read her blog, you MUST!  You will love her recipes, sense of humour…well everything about her.  Don’t tell anybody, but my hubby reads some of her posts.  Well he really only reads the ones that Marlboro Man (that’s what she calls her husband) writes.  My hubby would love to have a big farm.  So I think he farms/ranches vicariously through MM’s posts.

My notes:

I have to confess that I used semi-sweet chocolate chips instead of raisins.  Had I used raisins, I would have been pretty well the only one to eat them.  She says this recipe makes 12 muffins, but I found it made more and I really filled my muffin cups well.  Also I left out the nuts…bad allergy!  :)

They were the best muffins I have made in ages.  Everyone loved them!  That just never happens at my house!

Paula - Wow “everyone loved them”, now that’s a raving review right there!!! We seem to be on a muffin kick right now in our house, think I might give them a try…..and mine will have choc chips in them too.
