I have a great recipe for you this weekend.
Such yummyness for anyone on
a wheat free diet, or not. 😉
They are delicious!
½ cup butter
½ cup peanut butter *
1 cup coconut sugar or palm sugar
2 large free-range eggs
2 tsp vanilla
6 Tbsp coconut flour
2 tsp baking powder (aluminum free)
½ tsp sea salt
½ cup chopped pecans *
1 cup chocolate chips (milk, semi-sweet or dark)
1 Tbsp grated orange peel
Blend first 5 ingredients and then add remaining Mix well and drop
By Tbsp full and bake at 350 for 12 minutes or until slightly browned
Batter will feel sticky. Allow cookies to cool on cookie sheet and gently use spatula
To transfer on to cooling rack.
*To make nut free you could omit peanut butter and replace with “Wow butter” a soy butter that tastes much like peanut butter, coconut oil or butter and omit the chopped pecans. Enjoy
