Crock Pot Chicken and Salsa

There has been a distinct cooler air since “Leslie” blew past.  The children are all back in school, and the leaves are turning in Nova Scotia!!   This is such a wonderful time of year.  Cool sunny days, rustling leaves, and preserving the harvest for winter.  I’ve never preserved as much as this year.  Of course the big vegetable garden helped with that.  I’m still in the process, but when finished, I promise to show you my pantry full of colorful jars!

This time of year also sees me using my crock pot more.  This recipe is one of my crock pot favorites.  

Crock Pot Chicken and Salsa

4 frozen boneless chicken breasts
2 C salsa (approx 1 large jar)
1/2 C brown rice
1/2 can black beans (optional but VERY good for you)

Place frozen chicken breasts in crock pot.  Pour beans, rice, and salsa over chicken.  Cook on low 8 hours.  THAT…my friends, is it!!  So very easy!  Serve with some steamed veggies or a crisp salad.

The other thing I really enjoy about this recipe is that, the day after, it is awesome in a whole wheat wrap!!  Simply slice up or shred your chicken and add some of the rice mixture.
